Revel in the Season with Fall Flavors of New York

As the red, orange, and yellow hues of a New York autumn come back to us, so do the cravings for fresh apple cider, cinnamon donuts, and all of our favorite fall foods. Now is the time we celebrate the bounty of our region through local traditions like the Blessing of the Grapes and various harvest festivals, where you can find an abundance of local products and learn about the heritage of industries associated with them. When it comes to cheese, there is one seasonal treat that stands out among the rest as a classic companion and versatile invitation to experiment with fall flavor- apples!

It used to be standard to offer apple pie with a slice of cheddar cheese, and there’s a good reason to bring that classic back. The tang of the cheddar contrasts deliciously with the syrupy sweetness of the filling and highlights the natural flavors of the apples. The wide variety of New York State apples offers us many more, equally delicious cheese pairing options.

Our Tom cheese has sharpness like a cheddar, so it pairs well with a sweet and tangy McIntosh. You could aim for the memory of an apple pie by using a Cortland or Empire apple, the traditional picks for the pie. We like to add a touch of Quince Paste from Johnson Estate Winery, which adds another layer of flavor. The quince is a tough fruit, highly astringent and inedible when raw, but with a heady, vanilla aroma. It becomes sweet when cooked and the local Johnson Estate Winery transforms it into a sweet and spicy paste that is wonderfully matched with a cheddar.

Quince is an ancient fruit; it is featured in ancient Roman cookbooks and Greek poems. The fruit is rare, but it is often hidden among the orchards surrounding Lake Erie.

To indulge in the sweet side of fall, pair a Gala or Honeycrisp apple with our Luna cheese and a drizzle of caramel. This soft, fresh cheese adds creaminess and texture to the taste of a caramel apple. For pairing perfection, Reverie Owner Riko Chandra developed the recipe for our Onion Confit Jam designed specifically for Wanderer, our alpine-style cheese. It is a savory-sweet mix of caramelized onions, honey, and toasted fennel seeds that elevates the mild flavors of the cheese. For a festive burst of flavor, add a tart apple, like New York’s 20 Ounce variety, sautéed in butter with a sprinkle of cinnamon.
